San Fereolo’s “il Provinciale” wine is a Nebbiolo, certainly one of the most important wines produced by the winery. San Fereolo is located in one of the most beautiful wine-growing areas in the province of Cuneo, and the land is located in the municipality of Dogliani, identified in the Austri vineyard, with a southwest exposure sheltered from the wind at 400 meters above sea level.

It is one of the great and few grape varieties in the world that can give rise, with aging, to an aromatic spectrum of extraordinary finesse and complexity that is far removed and enriched from the immediate aromas of young wine. .

Harvested by hand and brought to the winery in crates in the second decade of October, it is crushed, destemmed and vinified in wooden vats without selected yeasts and other additives that could in any way alter the expression of the vintage and place.

The temperature is not controlled, especially in vintages with cooler summers when a fermentation arrest due to excessive alcohol is unlikely to develop.

After racking, the wine continues aging in large Slavonian oak wood and is then bottled without clarification or filtration.

Delicate and straightforward, this is a red, still, dry wine that enhances beautifully with main courses of red meat.
