l Pascal Jolivet’s Sancerre is a white wine of remarkable elegance, an expression of Sauvignon born from three different vineyards in the Loire Valley: 50 percent from Les Caillottes, a vineyard characterized by a very calcareous soil that gives the grapes finesse and sharpness; 30 percent from Les Terres Blanches, so named for its clay and limestone mixture soil, from which it derives good aromatic richness; and Silex, famous for its stony, siliceous soil that gives minerality and freshness.

Pascal Jouet’s Sancerre comes from the complementary union of these three terroirs. In fact, in the winery, vinifications are carried out separately by vineyard of origin in order to enhance the different expressions and peculiarities.

This Sancerre stands out for its aromatics, finesse and complexity. The bouquet exudes characteristic notes of pear and white fruit along with vegetal hints of gooseberry and wet straw. The sip reveals good depth, minerality and freshness. This is a white wine that can be paired with appetizers, first and second courses of fish and fresh flavorful cheeses.

The Jolivet family has been active in the wine business since 1926, when they began as négociants. It would be necessary to wait until 1987 and the arrival of Pascal Jolivet to see the birth of the wines that bear his name.Right away Pascal Jolivet established himself as a dynamic and revolutionary exponent having decided to exclusively vinify his Sauvignon Blancs with indigenous yeasts to better express the typical varietal characteristics. In a short time, Pascal Jolivet wines established themselves on the international wine scene for their distinct quality.

Today Pascal Jolivet’s estate covers 95 hectares in the villages of Sancerre and Pouilly Fumé and 50 hectares in the Touraine area for the production of Attitude wine. Since 2013 Pascal Jolivet has enlisted the help of a young and talented winemaker of Friulian origin, Valentina Buoso, in the winery, an expert in winemaking with indigenous yeasts and, with equal expertise, in working with Sauvignon Blanc.
