San Fereolo is located in one of the most beautiful wine-growing areas in the province of Cuneo, and the land is located in the municipality of Dogliani, identified in the Austri vineyard, with a southwest exposure sheltered from the wind at 400 meters above sea level.
Vinification takes place in stainless steel without temperature control (never letting it go above 29°C) and without the addition of selected yeasts. Eight days of maceration on the skins and racking before reaching full fermentation of the sugars.
It is then aged in steel without the inoculation of lactic acid bacteria. The wine is then kept on the fine lees for 4 months, Bottled in the summer following the harvest, it rests an additional four months in bottle.
San Fereolo’s Dogliani Superiore pairs beautifully with the entire meal, from earthy appetizers to medium-textured pasta dishes and meaty main courses.
