Martelli artisanal pasta is produced by the Martelli family in their pasta factory inside the Castle of Lari, in the center of the Pisan hills and obtained by slowly kneading the best durum wheat semolina with cold water, by bronze drawing, which makes it rough and, subsequently dried at “traditional low temperature” (33-36° C.) for about 50 hours (depending on weather conditions).
The result is a tasty pasta with good porosity that allows it to absorb seasonings well.
Martelli penne are not ridged because due to the traditional method used, they do not need the ridging to retain the seasonings. This feature enhances thickness uniformity by making it delicate. Enjoy them even with just olive oil and cheese and you will feel the difference.
