Barley is one of the oldest grains used by man. It is generally consumed “pearled,” that is, without the outer glumes and the bran underneath.
In cooking, it is mainly used as an ingredient in soups and stews. However, it is also ideal for cold salads, pies and stuffing or prepared as a risotto.

It does not require soaking. Cooking time: 40 to 50 minutes.
