The gold series is made from fish that arrive from the fishing ports of Cantabria, in the spring months, selected for size and freshness; after being treated with sea salt, they season from 6 to 10 months before being immersed in high-quality oil. Anchovies caught overnight are chosen; the curing and storage process maintains Codesa’s very high standards. The fillets are homogeneous and meaty.
