Parmigiano Reggiano made from Brown Cow’s milk differs in its high fat content, giving Parmigiano Reggiano a typical straw color and a tasty but delicate flavor.
The lactic family is enriched and notes of melted butter or rind can be appreciated alongside milk and butter due to the long aging process.
Fresh fruit and citrus fruits make an appearance alongside notes of dried fruits and spices. The flavor evolves into a balance of savory sweetness, and the cheese is perfectly soluble and crumbly at the same time.
Tyrosine crystals also appear, testifying to the high degree of proteolysis and thus also digestibility achieved by the product.
