Montecoppe Parmigiano Reggiano aged 42 months is a meditation cheese; the color is amber tending to brown, and tyrosine crystals are increasingly visible and perceptible on the palate; ripening phenomena impart a minutely grainy and mineralized texture.

The flavor is extremely complex, unusual for Parmigiano Reggiano: chestnut, almond, caramel, spicy and roasted become predominant.

Perfect accompanied by dessert wines and a good Barolo DOCG and enjoyed with a Balsamic Vinegar Jelly.
