The name comes from the town of the same name in the Parma hills where it has been produced for at least two centuries.
For the preparation of Salame Felino IGP Montecoppe, only meat from domestic heavy adult pork is used, minced to a medium grain and mixed with salt and peppercorns.
Stuffed into natural gut and tied by hand, the salami is hung and air cured, aided by the special microclimate typical of our area.
It has a mild flavor, never sour, and a consistency that is always crumbly with a firm, resilient slice.
